HeartBeet Organic Superfoods Café is a casual quick-serve superfoods restaurant that was started in 2008 by a local Seattleite named Monica Colgan. Monica started the restaurant after her mother was diagnosed with lung cancer in 2004, and she became inspired by seeing the healing that is possible when you eat mostly raw foods.
